2 chicken breasts
500ml chicken stock
200g soba noodles
75ml sriracha
50ml sweet chilli sauce
2 tsp malt vinegar
1 tsp shichimi or paprika
2 tbsp cornflour
150g butter or duck fat
1 tbsp fish sauce
or a wagamama chicken ramen meal kit
40g beansprouts
2 spring onions
1/2 red onion
1 chilli
1 lime
you can’t beat a classic bowl of comforting ramen, our japanese version of chicken soup for the soul with a kick of fiery flavour

2 tbsp cornflour
150g butter or duck fat
1 tbsp fish sauce

put 400ml of boiling water into a jug + add the broth paste
season the chicken with salt + pepper then place in a hot pan. sear both sides then place onto an oven tray + cook in the oven
in a bowl combine sriracha, sweet chilli sauce, paprika + a dash of malt vinegar to make chilli katsu sauce
thinly slice red onion, spring onion + fresh chilli
boil the noodles according to the packaging instructions
combine the broth with 1 tbsp of the chilli katsu sauce (or more if you like it spicy!)
place the cooked noodles in a bowl + pour over the chilli ramen broth. top with bean sprouts, red onion, spring onion, coriander, chilli, sliced chicken + a wedge of lime
