2 cooked chicken breasts

want the rejuvenation of a ramen but with a little added refreshment? try this cold chicken ramen, the perfect dish to whip up when you have leftover chicken in the fridge. adapt it to your tastes with extra chilli, more veg, or a boiled egg on top

2 cooked chicken breasts

prepare your ramen broth according to the wagamama chicken ramen kit instructions, then put in the fridge to cool down
cook your noodles according to the kit’s instructions, then rinse under cold water to stop the cooking process
while your broth is cooling, slice your chicken diagonally into strips, and prepare your veg by thinly slicing your pepper, onions, cucumber + chilli
assemble your refreshing ramen by dividing the noodles between two bowls and topping with your cooked chicken, crunchy peppers, onions and cucumbers as well as your edamame, then pour over the now cooled broth
top with coriander and finely sliced chilli, and drizzle with a bit of chilli oil
